Cowboy Caviar Bean Dip

Combine classic bean dip with corn salsa to make the BEST double-decker dip around! Grab a bag of Sprouts tortilla chips and dive in! 

Ingredients:

For the bean layer:
  • 1 16-oz. can Sprouts Organic Fat Free Vegetarian Refried Beans 
  • 4 Tbsp. Sprouts Hatch Green Chile Salsa 
For the corn salsa layer:
  • 2 Ears Corn, cooked (Optional: grilled—see below) 
  • 1 med. Avocado, peeled, pitted and diced 
  • 2 Tbsp. Fresh lime juice  
  • 1 cup Grape tomatoes, diced
  • 1/2 cup Sprouts Organic Black Beans, drained and rinsed 
  • 1/4 cup Red onion, minced 
  • 1/4 cup Fresh Cilantro, minced
  • 1-2 Tbsp. Jalapeno (optional) 
  • 1/2 tsp. Sprouts Chili Powder 
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper

Instructions:

  1. First, prepare the bean dip layer. In a medium bowl, combine 1 can Sprouts refried beans and 4 tablespoons Sprouts Hatch Green Chile Salsa. 
  2. Stir refried beans and salsa to mix well (refried beans should be more spreadable), and spread bean dip out over the bottom of a 2 quart baking or serving dish (8×8 square or oval shaped). Set aside while you prepare corn salsa layer. 
  3. Next, prepare the corn salsa layer. If grilling the corn (optional), heat an indoor grill pan over medium heat and place 2 ears corn on the preheated pan. Cook 2-3 minutes per side, rotating until corn has char marks.    
  4. Allow the corn to cool slightly, then slice the corn off the cob. To do this, stand an ear of corn upright on an end and run a knife down the sides of the cob until all the corn is removed. Repeat with second ear of corn. 
  5. While the corn is grilling, add 1 diced avocado to a medium bowl and coat with 2 tablespoons fresh lime juice. Stir to coat well, as the lime juice will help prevent the avocado from browning.
  6. Add cooked corn to the avocado and lime mixture. Add 1 cup diced grape tomatoes, 1/2 cup drained and rinsed Sprouts black beans, 1/4 cup minced red onion, 1/4 cup minced cilantro, and 1-2 tablespoons minced jalapeno (if using) to the bowl.  
  7. Sprinkle 1/2 teaspoon Sprouts chili powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper over the corn and vegetable mixture and stir to combine the corn salsa well. 
  8. Pour the corn salsa layer into the serving dish over the prepared bean dip layer, gently spreading the corn salsa out evenly 
  9. Cover and refrigerate until ready to serve.  
 

      Slow Cooker Tailgate Chili

      Simple Slow Cooker Chili is perfect for feeding a crowd on game days or chilly nights. Plus, the slow cooker does the work, so you can sit back and enjoy your afternoon

      Ingredients:

      • 4 Slices Sprouts Bacon, diced (Organic Turkey Bacon or Old Tyme Smoked Bacon) 
      • 3 Links (about 1 1/4 lb.) Sprouts Butcher Shop Hatch Green Chile Chicken Sausage, casings removed 
      • 1 med. Onion, diced 
      • 1 Red bell pepper, diced 
      • 1  Green bell pepper, diced 
      • 2  15-oz. cans Sprouts Organic Pinto Beans, drained  
      • 1  15-oz. can Sprouts Organic Kidney Beans, drained  
      • 2  15-oz. cans Sprouts Fire-Roasted Diced Tomatoes 
      • 1 6-oz. can Sprouts Tomato Paste 
      • 1 4-oz. can Sprouts Diced Green Chiles (don’t drain) 
      • 2 Cloves garlic, minced 
      • 2 Tbsp. Sprouts Chili Powder 
      • 1 1/2 tsp. Sprouts Ground Cumin 
      • 1/2 tsp. Sprouts Smoked Paprika
      • 1/2 tsp. Salt 
      • 1/2 tsp. Pepper 
      • 3 cups Sprouts Organic Low-Sodium Vegetable Broth  
      • Optional: 3-4 Tbsp. minced cilantro, for garnish  

      Instructions:

      1. In a medium pan, cook 4 slices diced bacon over medium heat until browned and crisp. Place cooked bacon in the crock of your slow cooker, drain any excess fat from the pan, and return pan to the stovetop.  
      2. If you haven’t already, remove and discard casings from 3 Links Hatch Green Chile Chicken Sausage. Add sausage to the same pan you used for the bacon.  
      3. Cook sausage 5-7 minutes over medium heat, or until completely cooked through and no pink remains. 
      4. Add cooked sausage to the crock of the slow cooker, along with the bacon.  
      5. Add 1 diced onion, 1 diced red bell pepper, and 1 diced green pepper to the slow cooker.   
      6. Add 2 cans drained pinto beans, 1 can drained kidney beans, 2 cans fire-roasted tomatoes, 1 can tomato paste, and 1 can green chiles to the slow cooker.  
      7. Add 2 cloves garlic, 2 tablespoons chili powder, 1 1/2 teaspoon cumin, 1/2 teaspoon smoked paprila. 1/2 teaspoon salt, and 1/2 teaspoon pepper to the slow cooker. 
      8. Pour 3 cups vegetable broth over the ingredients in the slow cooker and stir with a spoon or spatula to combine well. 
      9. Place lid on slow cooker and cook chili 6-8 hours on LOW or 3-4 hours on HIGH.  
      10. Remove lid, stir chili with a spoon, and garnish with cilantro, if desired.

            Pineapple Drink Recipe

            Pineapple Dream

            COMBINE

            • 3 cups Pineapple juice
            • 1 cup Orange juice
            • 1 cup Coconut water
            • 2 cups Club soda
            • Pineapple slices and maraschino cherries, for garnish
            1. Mix all liquids in a pitcher. Garnish chilled glasses with pineapple slices and a maraschino cherry. Serves 4.
             
            Dragon Fruit Drink Recipe

            Dragon Delight

            COMBINE

            • 1 Red-fleshed dragon fruit, roughly chopped into small pieces
            • 1 Ripe mango
            • 4 Fresh mint leaves
            • 4 oz. Pineapple juice
            • 1 handful Crushed ice
            • 1/3 cup Sparkling water
            1. Mix in a blender until smooth. Serve in a chilled glass, garnished with dragon fruit slice. Serves 2.
             
            Passionfruit Drink Recipe

            Island Refresher

            COMBINE

            • 3 cups Passionfruit juice
            • 2 cups Coconut water
            • 1/2 cup Fresh lime juice (about 8 limes)
            • 2 cups Club soda or sparkling water
            • 1/2 Pineapple, cored and cut into spears
            1. In a pitcher, mix all the liquids. Pour into chilled glasses and garnish with pineapple spears. Serves 4.
             
            Rambutan Breeze Spritzer

            Rambutan Breeze

            COMBINE

            • 1 Rambutan
            • 1 tsp. Sugar, or to taste
            • 1 oz. Water
            • 1 tsp. Lime juice
            • 1/4 tsp. Vanilla
            • 2 oz. Club soda
            1. Slice the rambutan around the middle and peel out the fruit. Add to blender with the other ingredients. Serve in chilled glasses.

            Celebrate the Earth from Home

            There’s no need to go far–you can join in on the celebration with these five sustainable tips and DIYs.

            Tip 1: DIY Sustainable All-purpose Cleaner

            Put the clean back in your all-purpose cleaner! This DIY cleaner is free from harmful toxins, making it a better option for you and the Earth. Plus, it’s perfect for cleaning almost every mess.

            Ingredients:
          • 1/2 cup Water
          • 1/2 cup White vinegar
          • 15-20 drops Essential Oil of choice

          • How to: In a spray bottle, combine and mix ingredients, shaking if needed.

            Tip 2: Composting

            Make your house plants and your planet happy with compost! Compost is the mixture of organic material that helps fertilize the soil that brings our Earth and all its plants to life. Not only does composting benefit the planet, but it’s also super easy to do at home!

            Step 1: Choose your location! Composting is easy to do both outside in your backyard, or inside in a bin. If you’re looking to compost outside, make sure it’s placed in a dry and shady area. If the outdoors isn’t your thing, no worries! All you need is a bin that you can leave under the sink, or on your counter.

            Step 2: Once you’ve decided where you’ll be composting, the next step is to gather your materials. Using dried leaves as the base of your compost, mix in kitchen scraps like veggies or fruits for your wet matter. Remember, you should always have about three times the amount of dry matter to your wet matter.

            Step 3: Now it’s time to layer! Keep using materials from your yard and your kitchen to build your compost. If your compost starts to smell, add dry material, and if it looks too dry, add water and wet matter. Make sure to turn your compost weekly. Once your compost appears to be a dark rich soil, you know you’ve succeeded—happy composting!

            Tip 3: Eat Plant-based

            Celebrate Earth Day by trying out a plant-based diet! Plant-based nutrition is a diet derived from eating plant-based proteins, dairy alternatives and even meatless meats! Now, with so many delicious options, going plant-based for yourself and the planet is easier than ever!

            Good for You: A diet that incorporates more plant-based foods is shown to be higher in dietary fiber and lower in saturated fats and calories when compared to diets higher in meat and dairy intake. Eating more plant-based foods may also help maintain healthy heart function, blood sugar levels and cholesterol.

            Good for Our Earth: The production of plant-based products has proven to be an environmentally sustainable enterprise. By reducing the production of animal-based products and increasing the consumption of plant-based products, communities can lower greenhouse gas emissions and reduce waste and energy usage.

            Get into the festivities this Earth Day by cooking up some delicious, plant-based recipes–perfect for supporting you and our Earth!

            Tip 4: Reusable Water Bottles

            A reusable water bottle is an easy and cost-effective way to be good to our Earth! Single-use plastic bottles often don’t get recycled, making them harder for our Earth to break down. Luckily, glass and stainless-steel water bottles can be bought just about anywhere and are the perfect on-the-go.

            Tip 5: Grow a Food-scrap Garden

            If you’ve got leftover scraps from your produce, you can easily grow more with these simple tips. Try this variety for an at-home salsa garden.

            Tomatoes: Remove the seeds from the inside of a ripe tomato, allow them to dry and plant in a small pot of soil. Place in direct sunlight and water two to three times per week. Once the plant is large enough, you can move it to a bigger pot and continue growing it outside.

            Peppers: Peppers are great to have on hand for a variety of recipes! The best part is that they’re super easy to grow on your own. Take the seeds from your pepper and plant them in soil, avoid direct sunlight and watch them grow!

            Garlic: Next time you bring home a head of garlic, remove one of the cloves and plant it with the root down in the soil. Keep outside in the sunlight and water two to three times per week.

            Cilantro: Cilantro can grow new leaves by simply placing the stems in a shallow cup of water near, or on a windowsill–it’s as easy as that!

            Onion: Cut the root of the onion at about 1/2-inch thick and place in soil. Allow the onion to get plenty of sunlight and keep the soil moist by watering as needed.

            Dye Your Eggs Naturally

            Easter’s right around the corner, so skip the egg dye kits this year and go natural! Save time and money by making your own all-natural egg dye using ingredients like fresh berries and spinach straight from your very own kitchen! Egg-cellence is guaranteed.

            Ingredients:

            • Eggs
            • 1 tsp. Salt
            • 2 Tbsp. White vinegar
            For Yellow/Green Dye:
          • 1 cup spinach, chopped

          • For Blue Dye:
          • 1 cup cabbage, chopped

          • For Dark Blue Dye:
          • 1 cup blueberries

          • For Red Dye:
          • 2 cups Beets, chopped

          • For Purple Dye:
          • 1 cup blackberries

          • How to:

            1. Boil eggs and let cool.
            2. Gather the different produce items you’d like to try as a colorant (example: spinach, etc.).
            3. Measure out at least 1 cup of each produce item.
            4. Add 2 cups of water to a pot, and add at least one cup of produce. You will need a separate pot or pan for each colorant.
            5. Bring mixture to a boil and then turn heat down to a simmer for 15 minutes.
            6. Pour through a sieve into a container.
            7. Add 1 Tbsp. of vinegar and stir. If you’re working with kids, let cool before use.
            8. Rub egg with a bit of vinegar with a cloth or paper towel. Place the egg into the container. The longer you leave the egg in, the deeper the color.
            9. Take eggs out of dye and let dry for several hours or overnight before handling.

            For extra vibrancy, create a more concentrated dye with more produce and less liquid.

            What is Regenerative Agriculture?

            Farmer on Tractor Regenerative Agriculture 640x640Caring for the health of our soil has become an increasingly important endeavor as we better understand the role nutrient-rich soil plays in the quality of our food and ecosystem. Regenerative agriculture is a system of farming that works to progressively improve the soil, water and the environment. These farming methods can help take CO2, a powerful greenhouse gas, out of the atmosphere and put it back where it can do the most good—under our feet—and that’s where this story begins, with soil.

            Carbon Sequestration

            Green plants naturally take carbon out of the air as part of photosynthesis and turn it into simple sugars. The sugars are exuded from the plant’s roots into the ground, where it feeds microorganisms that live around the root base. Those microorganisms use the carbon-based sugars to build topsoil—capturing, or sequestering carbon from the atmosphere. When a thin layer of compost is added to this system, it sets up a cycle where the plants are able to capture more and more carbon each year.

            Cover Crops

            Thoughtfully planted between other crops, cover crops can help to remedy soil shortcomings, keep weeds down, retain water and enrich the soil. This means the next crop will require less fertilizer, have a greater tolerance to drought and yield more.
            Another big plus to cover crops is they help to manage soil erosion.

            No Till

            Tilling the soil can lead to soil erosion, kill off the microorganisms necessary for healthy soil, encourage weed growth and can pack the soil making it harder for a crop to grow. Not tilling helps to create long-term soil fertility—organic soil that’s not tilled holds nutrients like a sponge, helping to create nutrient-rich food.

            Feed and Seed Program

            Today, food waste accounts for 24% of all landfilled material. And, about 7% of all human-caused greenhouse gas emissions come from food waste. But together, we can be part of the solution to start to heal the planet. In partnership with Ancient Nutrition, we collect 10,000 lbs. of food scraps per week and deposit them on Regenerative Organic CertifiedTM farms to feed animals and regenerate topsoil.
