Spicy Chili Lime Pecan Snack Mix

Prep Time: 5 mins
Cook Time: 45 mins

Ingredients:

  • 1 cup pecan halves
  • 1 large egg white
  • 2 tablespoons lime juice (from 1 lime)
  • 2 tablespoons olive oil or pecan oil
  • 2 to 3 teaspoons ancho chili powder
  • 1 1/2 teaspoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons salt
  • 1 cup wheat cereal squares
  • 1 cup small pretzel twists
Chili Lime Pecan Snack

Directions:

  1. Whisk together egg white, lime juice, olive oil, chili powder, cumin, garlic powder and salt until well blended. Fold in pecan halves and cereal until well coated. Spread mixture onto parchment lined baking sheet.
  2. Bake at 275 degrees F. for about 40-45 minutes or until mixture is toasted. Stir pecan mixture several times during baking. Allow pecans to cool completely and transfer to a bowl. Mix in pretzels and serve.

Salty Pecan Snack Mix

Prep Time: 10 mins
Cook Time: 20 mins

Ingredients:

  • 2 cups chopped pecans
  • 2 cups rice squares cereal
  • 1 cup rolled oats
  • 1 cup unsweetened coconut
  • 1/4 cup butter
  • 1 cup oyster crackers
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
Savory Salty Pecan Crunch

Directions:

  1. Preheat oven to 350°
  2. Add the rice squares cereal, oats, and unsweetened coconut to a bowl.
  3. In a small saucepan over medium heat, add honey, coconut oil, cinnamon, and salt.
  4. Stir until the mixture starts to boil then pour it over the snack mix and stir until well combined.
  5. Transfer to a baking sheet and bake for 8-10 minutes.
  6. While the mix is baking, add the butter to a saucepan over medium heat.
  7. Stir until the butter browns then add the chopped pecans and oyster crackers and turn the heat to low and stir while the pecans roast.
  8. Remove the snack mix from the oven and add the brown butter pecan and cracker mixture. stir to combine and enjoy!
