Olive oil
4 lg
8 C.
mixed lettuce greens
Jalapenos seeded and sliced
1 1/4 C.
Cherry Tomatoes quartered
2 C.
Canned Chickpeas drained
Sun Dried Tomatoes sliced
Green Onions sliced
2 lg
Ripe Avocado halved, pitted and sliced
1 bnch
Mint leaves only
4 tbsp
1 tsp
Red Pepper Flakes
Salt and Freshly Ground Black Pepper


  1. Heat the olive oil in a large non-stick frying pan set over a medium heat.
  2. Crack the eggs into the pan and season with a little salt and pepper. Fry until the whites and yolks are set, 4-5 minutes. Slide out of the pan onto paper towels to drain.
  3. Arrange the salad, jalapeƱos, cherry tomatoes, chickpeas, sun-dried tomatoes, green onions and sliced avocado in serving bowls.
  4. Top with the fried eggs and a sprinkling of pumpkin seeds, mint leaves and red pepper flakes before serving.
