Quantity Ingredient
2 1/2 C.
Canned Chickpeas drained
Vine Ripe Tomatoes cored and cut into wedges
White Onion sliced
2 tbsp
Olive oil
2 tsp
Smoked Paprika
1/2 tsp
Ground Cumin
1 pnch
Chili Powder
1 1/2 tsp
Freshly Ground Black Pepper


  1. Preheat the oven to 400°F. Line a large rimmed baking sheet with greaseproof paper.
  2. Thoroughly dry the chickpeas with paper towels. Toss with the tomatoes, onion, olive oil, spices, salt and pepper to taste in a large mixing bowl.
  3. Spread out on the baking sheet in a single layer. Roast for 30-40 minutes, stirring every 10 minutes until the chickpeas are golden and crisp on the outside.
  4. Turn off the oven and let the chickpeas cool in the oven for 1 hour.
  5. Remove from the oven and serve from the sheet.
