Quantity Ingredient
4 C.
Sweet Potatoes peeled and diced
2 C.
Carrot peeled and diced
1/3 C.
Heavy Cream
1/4 tsp
Grated Fresh Nutmeg
1/4 tsp
Ground Cinnamon
1 1/2 tsp
1 tsp
Freshly Ground Black Pepper
3 tbsp
Parmesan Cheese shredded
4 tbsp
Sunflower Seeds to garnish
1 tbsp
Olive Oil for drizzling


  1. Preheat the oven to 425°F
  2. Cook the sweet potato and carrot in a large saucepan of salted, boiling water until the vegetables are tender, about 15 minutes. Drain and leave to steam off for a few minutes.
  3. Return the vegetables to the pan they were cooked in and mash with the cream, nutmeg, cinnamon and plenty of salt and pepper.
  4. Transfer the mash to an ovenproof gratin dish. Sprinkle with the Parmesan cheese, sunflower seeds and drizzle with a little olive oil.
  5. Bake for 25-30 mins until the mash is piping hot and golden-brown at the edges.
