half & half
2 tbsp
Butter cubed
1 1/2 C.
Cooked Ham diced
Red Peppers sliced into rings, seeds removed
1 handful
Parsely chopped
1 bnch
Mint leaves only, to garnish
Salt and Freshly Ground Black Pepper


  1. Beat the eggs with the half-and-half and plenty of salt and pepper in a mixing bowl. Preheat the broil function of an oven to low.
  2. Melt a couple of cubes of butter in a large non-sticky frying or sauté pan set over a moderate heat.
  3. Pour about one-third of the beaten egg mixture into the pan and tilt to coat the entire surface with the egg.
  4. Leave to set for 1 minute before scattering about one-third of the ham, sliced peppers and parsley over the top of the omelette.
  5. Flash the pan under the broiler to glaze the top of the omelette until golden-brown in appearance. Slide the omelette out of the pan onto a plate.
  6. Repeat steps 2 through 5 another two times, cooking three omelettes in total.
  7. Cut the cooked omelettes into square bites. Stack three to each bite, interspersing the stacks with mint leaves before skewering in place with cocktail sticks.
  8. Serve warm or cold as an appetizer or canapé.
