2 C.
1 tsp
Whole Cloves
1 sm
Cinnamon Stick
Whole Star Anise
1/2 tsp
Ground Ginger
1/2 tsp
Ground Cardamom
1/2 tsp
Ground Nutmeg
1/4 tsp
Ground Allspice
Tea Bags black tea
3 tbsp
Honey or dark agave nectar
3 C.
Ground Cinnamon to serve


  1. Combine the water and spices in a heavy-based saucepan.
  2. Whisk briefly before setting over a moderate heat, bringing the water to the boil.
  3. Once boiling, remove from the heat and stir in the tea bags and 2 tbsp agave nectar.
  4. Return the water to the boil before setting aside to steep for 5 minutes.
  5. Strain the tea through a fine-mesh sieve into a large jar or jug. Divide the tea between four serving glasses.
  6. Combine the milk with the remaining agave nectar in a large heavy-based saucepan and set over a moderate heat until it starts to boil. Remove from the heat and froth with an immersion blender.
  7. Divide the frothy milk between the glasses, stirring thoroughly to combine with the tea.
  8. Garnish each latte with a sprinkle of ground cinnamon. Serve with iced cookies on the side.
