Ingredients

Cauliflower quartered
1 2/3 cp
Cherry Tomatoes
1/2 ea
Whole Almonds roughly chopped
1 bnch
Parsely leaves only, roughly torn
4 tbsp
Extra Virgin Olive Oil
1 ea
Lemon juiced
ea
Salt and Freshly Ground Black Pepper

Instructions

  1. Using a box grater, grate the cauliflower into large grain-sized pieces.
  2. Blanch in a large saucepan of salted, boiling water for 1 minute. Drain and refresh immediately in a bowl of iced water.
  3. Drain again and spread out over sheets of paper towels. Pat the tops of the cauliflower with more paper towels until thoroughly dried.
  4. Divide between serving plates and scatter over the cherry tomatoes, chopped almonds and parsley leaves.
  5. Drizzle with extra-virgin olive oil and lemon juice. Season with salt and pepper before serving.
