Cucumber Noodles with a Spinach & Peanut Sauce

Onion finely chopped

Garlic minced
8 C.
Baby Spinach washed
1 C.
2% Milk
2/3 C.
Creme fraiche or sour cream light
2 lg
1/2 C.
Unsalted Peanuts
Salt and Freshly Ground Black Pepper


  1. Heat the olive oil in a sauté pan set over a medium heat until hot. Add the onion, garlic and a pinch of salt, sweating for about 5 minutes.
  2. Stir in the spinach, cover the pan with a lid, and cook over a slightly reduced heat until the spinach is wilted.
  3. Tip the spinach into a blender or food processor and add the milk and crème fraîche. Blend on high until smooth. Adjust to taste with salt and pepper.
  4. Cut off the ends of the cucumber before cutting in half. Attach to a spiralizer before twisting through the machine to churn out strands of cucumber.
  5. Arrange in piles on serving plates. Spoon over the spinach sauce and garnish with peanuts before serving.
