Ingredients

Green String Beans trimmed
ea
Salt and Freshly Ground Black Pepper
1 1/2 cp
Cherry Tomatoes sun gold
ea
Vinaigrette Dressing prepared
ea
Mint Sprigs

Instructions

  1. Cook the string beans in a large saucepan of salted, boiling water until tender, about 3 minutes.
  2. Drain well and refresh in iced water. Drain again and pat dry with paper towels, seasoning with a little salt and pepper.
  3. Cut some of the tomatoes in half, leaving some whole for presentation.
  4. Toss the beans with the tomatoes in a large bowl with vinaigrette dressing to taste. Serve with a garnish of mint.
