Ingredients

For the Dressing:
handful
Fresh Mint Leaves plus additional for garnish
3 tbsp
Rice Vinegar
6 tbsp
Olive oil
1 tsp
Maple Syrup (optional)
1/2 med
Apple cut into chunks
For the Salad:
6 hd
Baby Romaine Lettuce washed, dried and halved lengthwise
2 tbsp
Canola Oil
ea
Salt and fresh ground pepper to taste
1 tbsp
Pine Nuts
4 oz
Shaved Parmesan Cheese

Instructions

For the Dressing:
  1. Combine all of the ingredients together in a blender and puree. Set aside
For the Salad:
  1. Preheat grill to medium high. Lightly brush the romaine all over with the oil. Season with salt and pepper.
  2. Lay flat side of lettuce on the grill and let cook about 2 minutes, or until grill marks appear. Flip the lettuce and grill another 2 minutes. Flip once more back to the flat side, angled in the opposite direction of the existing grill marks. Grill for another 2 minutes or until grill marks appear and the stem of the lettuce is fork tender.
  3. Transfer grilled romaine to a platter and arrange in a single layer. Pour the dressing onto the romaine, sprinkle with pine nuts and shaved Parmesan. Garnish with fresh mint to serve.
