Deli Ham lightly fried and chopped

Peas blanched
2 tbsp
Snow Peas thinly sliced, blanched
Pecorino Cheese for garnish


  1. Heat a 10-inch nonstick skillet over medium heat; add butter.
  2. In a medium bowl whisk eggs together until light and fluffy, season to taste with salt and pepper.
  3. Pour eggs into the hot skillet. Gently tilt the skillet around to spread the eggs out evenly and begin to set. Let them cook until almost completely set, about 1 to 1 1/2 minutes.
  4. Arrange the ham, peas, and snow peas on half of the omelet. Using a rubber spatula, carefully loosen eggs from the edges of the skillet, and then fold the empty half of the omelet over the other.
  5. Transfer the omelet to a serving plate. Garnish with freshly grated pecorino. Serve immediately.
