Salsa Verde

Cream Cheese
1/2 C.
Fresh Cilantro
Olive oil


  1. Pre-heat oven to 350°.
  2. Dice red onion and avocado, and mince fresh cilantro.
  3. In a small pot, add olive oil and cook diced red onion until translucent.
  4. Add salsa verde and cream cheese to small pot and stir until well incorporated.
  5. Line bottom of large baking dish with some of the salsa verde sauce.
  6. Lay a tortilla flat and fill with turkey, cheese, red onion, avocado, cilantro and 2 Tbsp. of the salsa verde sauce. Roll tortilla and add to baking dish.
  7. Repeat until all the tortillas are used. Top enchiladas with remaining salsa verde and shredded cheese.
  8. Bake enchiladas for 25 minutes. Top cooked enchiladas with red onion, avocado and cilantro.
