Ingredients

Cornbread
1 ea
Sweet Onion
2 ea
Carrots
2 ea
Celery Stalks
1 C.
Chorizo
1 C.
Chicken Stock
2 ea
Garlic Cloves
2 tbsp
Fresh Cilantro
ea
Salt and Black Pepper

Instructions

  1. Preheat oven to 350° and lightly grease a large baking dish.
  2. Add cubed cornbread to baking dish and bake until cornbread is crusty. Estimated cooking time is 20 minutes.
  3. In a large skillet add crumbled chorizo, bulk not links work best, with sweet onion, diced carrots, diced celery and minced garlic. Cook for 10 minutes.
  4. Combine chorizo mixture, toasted cornbread, chicken stock and fresh cilantro in large baking dish. Toss gently and salt and pepper to taste.
  5. Bake 20-30 minutes or until stuffing is golden brown.
