1 C.
White Rice
1 ea
Cinnamon Stick
1 C.
Pumpkin Purée
1 C.
Coconut Milk or vanilla almond milk
2/3 C.
2 tsp
Pumpkin Pie Spice


  1. Combine water, rice and cinnamon stick in a blender and pulse to coarsely grind.
  2. Soak at room temperature for 3 hours or refrigerate over night.
  3. Once rice mixture has soaked, puree in a blender in batches until smooth.
  4. Strain rice milk through cheesecloth or a fine mesh colander into a pitcher.
  5. In a large mixing bowl combine pumpkin puree, coconut milk, agave and pumpkin pie spice.
  6. Combine pumpkin mixture with strained rice milk.
  7. Chill and serve over ice. Garnish with extra pumpkin pie spice and add a cinnamon stick if desired.
