Mediterranean Potato Salad

Quantity Ingredient
3 lb
Fingerling Potatoes
4 ea
Sun-dried Tomatoes drained and chopped
1 cp
Kalamata Olives pitted
1/4 cp
Feta Cheese crumbled
2 cp
Basil roughly chopped
2 tbsp
Balsamic Vinegar
1/4 cp
Olive Oil
Kosher Salt to taste
Freshly Ground Black Pepper to taste


  1. Chop any large potatoes in half. In a large pot place the potatoes and cover them with water. Bring to a boil, reduce heat and simmer for 20 minutes or until fork tender. Drain and cool.
  2. In a large bowl combine cooled potatoes, tomatoes, olives, cheese and basil.
  3. In a small bowl, whisk together vinegar and olive oil. Pour over the salad; toss gently to coat and season with salt and pepper.
