Whole Wheat Flour
1 cp
Milk
1 ea
Egg
6 tbsp
Pumpkin Purée
2 tbsp
Agave
1 tbsp
coconut oil
2 tsp
Baking Powder
1 tsp
Cinnamon
1 tsp
Ginger
1 1/4 cp
Cream Cheese
1/3 cp
Yogurt
4 tbsp
Maple Syrup
3 tbsp
coconut sugar
1 tsp
Nutmeg

Instructions

  1. To start, mix together pancake ingredients: flour, milk, egg, pumpkin, agave, coconut oil, baking powder, cinnamon and ginger.
  2. Lightly grease a pan over medium heat and pour in 1/3 cup batter for each pancake. Cook pancakes 3 to 4 minutes per side. Set pancakes aside to cool.
  3. In a medium bowl, add cream cheese, yogurt, syrup, coconut sugar and nutmeg. Combine ingredients until smooth and creamy.
  4. To create the cake, place on pancake on a serving dish and coat with 1/4 to 1/3 cup of icing, repeat until the cake has 5 to 7 layers.
