Over-cooked chicken can be a race against the cluck, but rather than ruffling your feathers, try some of these easy tips for cooking up the juiciest chicken … ever.

  • Get your mallets ready! Thicker cuts of chicken like the breast and thigh will benefit from flattening, allowing them to cook evenly.
  • Marinate your chicken overnight to help break down tough pieces and infuse flavor. (Try a simple marinade of olive oil, lemon juice, garlic powder, salt and pepper, oregano and red pepper.)
  • Rest is best! Always give your chicken 5–10 minutes to allow the juices to redistribute.

After breaking down your chicken wings, be sure to thoroughly clean and dry them before placing them in a freezer bag for later use.
