New Ways to Use Pumpkin

If you're like us, you're pumped for all things pumpkin! That distinct fall flavor is in full swing here at Sprouts so there's no need to resist your cravings another second. In fact, take them even further with one of these unique new ways to enjoy the pumpkin craze – including sweet and savory, vegan and paleo options!

PUMPKIN BUTTER

Ingredients

  • 1 can of pumpkin puree
  • ¾ cup of brown sugar
  • ½ cup of apple cider vinegar
  • 3 tsp. of spice (pumpkin pie and cinnamon work well)

Instructions

  1. Simmer ingredients together for a half hour.
  2. Enjoy a new topping to spread on bread or with apple slices!

PUMPKIN BUTTER CUPS

Ingredients

  • 1 cup of chocolate
  • Pumpkin butter

Instructions

  1. Place 1 cup of chocolate in a pot over low heat until melted. Stir continually.
  2. Spoon enough chocolate into a muffin liner to create a base and cover the bottom of the muffin liner.
  3. Place in the refrigerator to cool for 30 minutes.
  4. Using pumpkin butter as the filling, place a spoonful on top of the chocolate mold.
  5. Use remaining chocolate to completely cover filling.
  6. Place in the refrigerator to let set for an hour.

PALEO PUMPKIN PIE SMOOTHIE

Ingredients

  • 1 ½ cups non-dairy milk of choice
  • 2/3 cup pumpkin puree
  • ½ cup preferred yogurt
  • 1 banana, peeled
  • 10 baby carrots
  • 10 baby carrots
  • 1 Tbsp. grass-fed gelatin
  • 1 Tbsp. maple syrup
  • 2 tsp. each of vanilla extract and cinnamon
  • Stevia to taste

Instructions

  1. Place all ingredients in a blender and blend until smooth.
  2. Enjoy!

VEGAN PUMPKIN SOUP

Ingredients

  • ½ medium sweet onion, diced
  • 15 oz. pumpkin
  • 2 cups water
  • ½ cup coconut milk
  • 3 Tbsp. maple syrup
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • Optional: Ground pepper, toasted coconut flakes

Instructions

  1. Add water and sauté the onions in a soup pot for six to seven minutes, then add all other ingredients (except coconut flakes). Simmer for 15 minutes (uncovered), stirring frequently. For a perfectly smooth soup, use an immersion blender to smooth the onions.
  2. Plate and top with freshly ground pepper, cinnamon and the toasted coconut flakes.
